Toffee is the golden chalice of candy and a great idea if you are one to make home made Christmas candy! Years ago, I attended a party where someone had brought homemade toffee. It was so tasty, I thought about it for years hoping I would run into the same woman and get this amazingly easy candy recipe. Here it is below, 4 simple ingredients of equal measure makes a terrific homemade toffee to add to your box of candy recipes!
1 cup butter
1 cup sugar
1 cup semi-sweet chocolate chips
1 cup chopped almonds
Add butter and sugar into a heavy medium pot. Cook, stirring constanly, over high heat for about 8 to 10 minutes. The stages to look for: butter will melt and blend with the sugar, butter will foam, mixture will start to get sticky like taffy, mixture will turn dark amber – this is when you take it off the heat! Pour mixture on to an ungreased baking sheet that has 1/2-inch high sides and doesn’t have a coating such as Teflon. About 3 minutes later, scatter chocolate chips on top and use a butter knife or offset spatula to spread the chocolate into an even layer. Scatter almonds on top. Allow toffee to cool and harden.
